Greek Yogurt Bread

This Greek yogurt almond flour bread is a simple, quick alternative to traditional bread. Rich in protein and full of flavor, the combination of Greek yogurt and almond flour yields a surprisingly moist, tender crumb that defies the dry texture often associated with almond-flour baking. If you think almond flour bread can’t be satisfying, don’t knock it until you try it.

Ingredients

    • 3 whole eggs
    • 14 oz full-fat Greek yogurt (1¾ cup)
    • 1 Tbsp extra-virgin olive oil
    • 1 Tbsp apple cider vinegar
    • 1 tsp salt
    • 2½ cups almond flour (fine, blanched works best)
    • 2 tsp baking powder
    • Sunflower seeds, pumpkin seeds, or sesame seeds, optional, for topping

Method

    1. Preheat oven to 350°F. Line a loaf pan with parchment paper or generously grease the pan with oil or butter.
    2. In a large bowl, whisk together the eggs, Greek yogurt, olive oil, and apple cider vinegar until smooth and fully combined.
    3. In a separate bowl, mix the almond flour, salt, and baking powder.
    4. Add the dry ingredients to the wet ingredients and mix until fully incorporated. The batter should be thick but spreadable.
    5. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle with seeds if using.
    6. Bake for 45–55 minutes, until the top is lightly golden and a toothpick inserted into the center comes out mostly clean.
    7. Remove from oven and allow the bread to cool completely before slicing. This step is essential for proper structure and clean slices.

Serves: 16 slices (½-inch slices)

Approximate nutritional analysis per serving (½-inch slice): 125 calories, 6 g protein, 5 g carbohydrates, 10 g fat, 2 g dietary fiber.
