Greek Yogurt Bread

This Greek yogurt almond flour bread is a simple, quick alternative to traditional bread. Rich in protein and full of flavor, the combination of Greek yogurt and almond flour yields a surprisingly moist, tender crumb that defies the dry texture often associated with almond-flour baking. If you think almond flour bread can’t be satisfying, don’t knock it until you try it.

Ingredients

    • 2 whole eggs
    • 14 oz full-fat Greek yogurt (that’s 1 cup + ¾ cup)
    • 1 tsp salt
    • 2½ cups almond flour (fine, blanched works best)
    • 2 tsp baking powder
    • Sunflower seeds, for topping (or use pumpkin or sesame seeds)

Method

    1. Preheat oven to 350°F and line the bread pan with parchment paper. If parchment paper is not available, generously grease the pan with oil or butter.
    2. In a bowl, whisk eggs and Greek yogurt until smooth.
    3. In a separate bowl, mix almond flour, salt, and baking powder.
    4. Combine wet and dry ingredients, mixing until fully incorporated.
    5. Pour batter into the prepared bread pan.
    6. Bake for 45–55 minutes, until the center is set and a toothpick comes out mostly clean.
    7. Allow bread to cool completely before slicing.

Serves: 16 slices (½-inch slices)

How to Use

    • Toasted and paired with eggs or lean protein
    • Served alongside salads or vegetables
    • Used as a bread alternative for sandwiches or open-face toasts
    • Best enjoyed with protein-forward or fat-burning meals

Approximate nutritional analysis per serving (½ inch slice): ~110 calories (≈5.5 grams of protein, ≈5 grams of carbohydrates, ≈9 grams of fat, ≈2 grams of dietary fiber).
