Mom’s Mac & Cheese

There are countless mac and cheese recipes out there, but this one is my favorite. It’s my mom’s recipe, and yes, it features Velveeta. I know some people hesitate because Velveeta isn’t considered “real” cheese, but before you dismiss it, scroll down to learn what Velveeta is. You might be surprised!

Quick tip: Mac and cheese counts as a fast carb portion when building a fat-burning meal!

INGREDIENTS:

    • 1 box macaroni elbows (1 lb / 16 oz)
    • ½ block Velveeta® Original (1 lb)
    • 1 stick butter (4 oz)
    • ¾ cup milk (any type)
    • 1 package cream cheese (16 oz)
    • Salt and pepper to taste

METHOD:

    1. Cook the macaroni elbows in a large pot according to the package instructions.
    2. Rinse thoroughly, then return the pasta to the pot.
    3. Place the pot over low heat and stir in the butter until melted.
    4. Add the milk and continue stirring.
    5. Slice the Velveeta and add it to the pot along with the cream cheese.
    6. Stir continuously over low heat until all the cheese and butter are completely melted and smooth.
    7. Transfer the mixture into a 9×11 oblong baking dish (glass preferred) and cover with aluminum foil.
    8. Bake at 350°F for 60 minutes or until brown on top.

SERVES: 15

Approximate nutritional analysis per serving: 241.5 calories, 8.5 grams protein, 25.7 grams carbohydrates, 11.3 grams fat, and 0 grams fiber.

*Velveeta cheese is made from whey, milk protein concentrate, milk, fat, and preservatives. Although it’s not considered a traditional cheese, it is a surprisingly good source of conjugated linoleic acid (CLA), containing more than most whole-milk cheddar cheeses. It also provides a solid amount of calcium.
