Peanut Beef Skewers

Lean beef alternating with grilled peppers and onions are coated in a tasty peanut sauce.

Serve this peanut beef skewer recipe with a bed of warm brown rice or a Fast Carb of your choice.

Ingredients:

  • 1 (1¼ lb.) beef flank steak
  • 1/3 cup low sodium teriyaki sauce
  • ½ tsp bottled hot pepper sauce
  • 1 medium green or red sweet pepper, cut into ¾ in. pieces
  • 4 green onions, cut into 1 in. pieces
  • 3 TBSP all-natural peanut butter
  • 3 TBSP water
  • 2 TBSP low sodium teriyaki sauce

Method:

  1. Trim fat from meat. Thinly slice meat across grain into bite-size strips. For marinade: In medium bowl, combine 1/3 cup teriyaki sauce and ¼ tsp of the hot pepper sauce. Add meat; toss gently to coat. Cover and marinate in the refrigerator for 30 min. If using wooden skewers, soak in water for 30 min. before using.
  2. Drain meat, reserving marinade. On wooden or metal skewers, thread meat alternating with sweet pepper and green onion. Brush with marinade.
  3. Grill kabobs on rack of uncovered grill directly over medium coals for 3-4 min. or until meat is slightly pink in center, turning once halfway through grilling. 
  4. For peanut sauce: In small saucepan, combine peanut butter, the water, 2 TBSP teriyaki sauce, and remaining hot pepper sauce. Cook and stir over medium heat just until smooth and heated through. Serve kabobs with peanut sauce.

Serves: 5 (2½ oz. cooked meat and 1½ TBSP sauce)

Approximate nutritional analysis per serving: 327.2 calories, 34.4 grams of protein, 8.4 grams of carbohydrates, 17.1 grams of fat, 1.8 grams of fiber, 602.8 mg of sodium

Approximate nutritional analysis per serving: 391.2 calories, 35.4 grams of protein, 38.9 grams of carbohydrates, 16.3 grams of fat, 15.5 grams of fiber
