Chipotle Turkey Wrap

These tangy turkey wraps make a tasty fat-burning meal for the entire family.

This recipe is an excerpt from Robert Ferguson's Diet-Free for Life book!

For the chipotle sauce:

  • 1 tablespoon light cream cheese, softened
  • 2 tablespoons light butter (e.g., Smart Balance, Earth Balance)
  • 2 tablespoons light sour cream
  • 1 teaspoon red wine vinegar
  • 1 chipotle pepper in adobo sauce, seeded and finely chopped

For the wraps:

  • 2 ears fresh corn, husked
  • 2 tablespoons light butter
  • 2 tablespoons chopped fresh garlic
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon chopped flat-leaf parsley
  • 1 teaspoon chopped fresh cilantro
  • 2 tablespoons chopped red bell pepper
  • 2 tablespoons chopped red onion
  • 1 tablespoon red wine vinegar
  • 2 tablespoons freshly squeezed lime juice
  • 6 whole wheat tortilla wraps
  • 1/4 pound light pepper Jack cheese, cut into 6 slices
  • 1/4 pound Muenster cheese, cut into 6 slices
  • 6 red leaf lettuce leaves
  • 1 avocado, thinly sliced
  • 1 pound cooked turkey breast, thinkly sliced


Make the chipotle sauce:
Combine all the ingredients in a small mixing bowl, cover, and refrigerate for at least 1/2 hour.

Method:

Preheat the grill to high.

Make the wraps: Place corn on a large piece of heavy-duty foil, top with the butter, garic, and black pepper. Make a foil packet by wrapping the corn tightly, and grill for 20 minutes, turning it once or twice. Unwrap and set aside to cool.

When the corn is cool enough to handle, cut the kernels from the cobs and put them in a mixing bowl. Mix in the parsley, cilantro, bell pepper, onion, vinegar, and lime juice. Refrigerate for at least 1/2 hour.

Lay a tortilla wrap on a work surface and layer with 1 slice each of the pepper Jack and Muenster cheese, 1 lettuce leaf, and one-sixth of the avocado and reserved corn relish. Drizzle with some of the chipotle sauce, and top with one-sixth of the turkey. Roll up to form a wrap. Repeat with the remaining ingredients.

Serves: 6

Approximate nutritional analysis per serving: 391.2 calories, 35.4 grams of protein, 38.9 grams of carbohydrates, 16.3 grams of fat, 15.5 grams of fiber
